Just had to share this one...

A friend of mine shared the BEST banana bread recipe I've ever tasted. (Thanks TJ!) I had some sweet potatoes and decided to adapt the recipe to use them up. I've included the banana bread recipe and my Sweet Potato Bread recipe below.
Best Ever Banana Bread Recipe

1 C. mashed bananas
1 C. Granulated sugar
1/4 C. veg oil
1/2 C. sour cream
2 eggs
1 1/2 C. C. all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

In a lg bowl mix together well the bananas, sugar, oil, sour cream and eggs.

In a onther large bowl mix together the flour, b. powder, b. soda and salt.

Add the wet ingred. to the dry ingred. and fold together only until just combined, do not over stir.

Bake 325 for 1 to 1.25 hrs or till tester comes out clean

Cool for 5 before removing from pan

*I double this recipe with no problems.


Sweet Potato Pecan Bread

1 C. mashed sweet potato (I added a little apple juice to thin these out more like mashed bananas)


1/2 C. Granulated sugar

1/2 C. Brown Sugar

1/4 C. Butter Melted

1/2 C. sour cream

2 eggs

1 1/2 C. C. all-purpose flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 Tsp Cinnamon

1/2 cup chopped Pecans

In a lg bowl mix together well the mashed sweet potato, sugars, butter, sour cream and eggs

In a onther large bowl mix together the flour, cinnamon, b. powder, b. soda, salt and pecans.

Add the wet ingred. to the dry ingred. and fold together only until just combined, do not over stir.

Bake 325 for 1 to 1.25 hrs or till tester comes out clean

Cool for 5 before removing from pan
